This hot cross bun contains absolutely no refined grains or sugars, is dairy-free, rich in antioxidant and anti-inflammatory spices and packed with delicious flavour. Ingredients

Low Carb Hot Cross Buns

½ cup almond flour

30g psyllium husks

1 tsp. baking powder

2 tbsp. granulated stevia / xylitol / coconut sugar

½ tsp. salt

1 tsp. vanilla extract

½ tsp. mixed spice

½ tsp. cinnamon

½ tsp. ground cloves

4 eggs

1 cup boiling water

¼ cup raisins – coated in almond flour

¼ cup cacao nibs – coated in almond flour

Icing

Stevia or erythritol icing mix

1 tsp vanilla extract

Enough water to make a smooth paste

Instructions

Preheat Oven to 180°C

Step 1: Prepare Hot Cross Buns

Mix all the dry ingredients in a mixing bowl. Add the eggs and mix using a whisk. Add the boiling water and mix until evenly combined to form hot cross bun dough.

Step 2:

Roll dough into 8 equal balls and place on a baking tray. Oven bake at 180°C for 20-30 minutes until golden on the outside and cooked in the centre.

Step 3: Prepare Icing

Combine stevia icing mix with vanilla and water to form a smooth paste

Step 4:

Mark each hot cross bun with a cross using the stevia icing mix.
